Hobo Packets

  • 1 pound lean ground beef (I used 97%)
  • sea salt
  • pepper
  • seasoned salt
  • Worcestershire sauce
  • 1 C green beans, cut into bite-size pieces
  • 2 cobs of corn (cut corn from the cob)
  • 1 red bell pepper, chopped
  • 2 small potatoes, cubed
  • 1 zucchini, cubed
  • 1/4 C onion
  • extra virgin olive oil
  • heavy duty aluminum foil

Lay out four pieces of heavy duty aluminum foil.  Divide the ground beef into four equal portions and crumble a fourth onto the center of each piece of foil.  (The original recipe calls for flat patties).  Season with sea salt, seasoned salt, pepper, and several dashes of Worcestershire sauce.  Top each with 1/4 of the veggies.  Season with salt, seasoned salt, pepper, a couple more dashes of Worcestershire, and a drizzle of olive oil.  (I used about a teaspoon of oil on each).  Fold the ends of the foil together to seal up the packets.  Place on a heated grill (medium-high, approximately 450-500 degrees F) and grill for 30-45 minutes…until the potatoes are tender.  Remove from grill, place each packet on a plate, and enjoy!  Serves 4.  Recipe as noted above contains approximately 360 calories per serving.
