Roasted Vegetable Dip

This recipe is from the Dec/Jan 2011 issue of Healthy Cooking magazine. My kitchen smelled WONDERFUL while roasting the veggies and the most difficult part about making this recipe was not eating all the veggies while I waited for them to cool! It makes a great dip and my son loves crackers so this is a great way to “sneak” veggies into his mouth!

This recipe comes from kraftrecipes.com. I liked the flavor of these, but next time I’ll add some garlic powder and some Old Bay seasoning.

I found this recipe on the Taste of Home website and adapted it a bit. It’s from the Simple & Delicious magazine. This dip is terrific with pretzels. I will be adding it to my tailgating rotation next fall.

Bacon Pierogi Bake

I’ve been a fan of Mrs. T’s frozen pierogies for several years so I was excited to try this recipe from the December 2010 issue of Cooking Light magazine. I especially love that you use the pierogies frozen and you don’t have to boil them first. This recipe was pretty quick and easy to make and had delicious results!

Barbecue Chicken and Rice

This is a recipe from a cookbook called Quick Meals for Healthy Kids and Busy Parents. I like having quick and easy recipes to turn to after a long day of work, especially when the kiddo and husband are hungry! I was a little unsure about whether we would like this, but it actually is quite good.

Sweet Potato Pie

This recipe came from Gina’s Weight Watchers Recipes (www.skinnytaste.com). I’d never had sweet potato pie before and was pleasantly surprised! It’s similar to pumpkin pie, but less spicy and more brown sugar-y. We liked it best after it was refrigerated…and with a dollop of cool whip! :)

Winter Harvest Vegetable Soup

This recipe is adapted from the Feb/March 2008 issue of Light & Tasty magazine. It’s definitely one of my favorite soups to make during the winter. I absolutely love the flavor – I think it’s from the bay leaf.

Easy Apple Crisp

Another easy and delicious apple crisp recipe I came across. I think I may actually prefer this over the Southern Apple Crumble recipe since it’s not as sweet. I may cut back on the sugar a bit next time and also use lite butter to try to cut some calories and fat.
