Another recipe of mom’s. I remember making them with my mom as a kid and sending them in care packages to my older brothers. They were a favorite of mine growing up and I still love them today (especially with coffee!). I love that my husband and son love them too.

Rolo Cookies

I found this recipe in Simple & Delicious. The original recipe called for dipping the cookie in chopped hazelnuts before baking, but I omitted that step. Mine didn’t flatten much while baking, so I tapped them down just a bit after they came out of the oven, being careful not to push too flat because I didn’t want the caramel to ooze out. These cookies are delicious!

Zucchini Brownies

I found this recipe on the Taste of Home website when searching for zucchini recipes. It’s from the September/October 2006 issue of Simple & Delicious. Despite being called brownies, it’s actually much more cake-like. It’s super-moist and delicious and I’m guessing very few will ever guess that there’s zucchini in it.

This is a Prevention recipe that I got from a friend. It’s been slightly modified from the original version and has lots of possibilities. In the future I think I’ll add some chopped kalamata olives and artichoke hearts. Yum!

Hobo Packets

I found this recipe on The Enchanted Cook blog and adapted it just a bit. I can’t tell you how good these turned out! Both my husband and I talked about how great they were while we ate them. These will be added to our tailgating menu this fall for sure. The beauty is you can add whatever vegetables you have on hand. Mushrooms would be great!

Mom’s Hot Sauce

This is my mom’s recipe for hot sauce. I grew up eating it on ribs and I love it. It’s great on pork roast, too. I usually brush some of it on whatever I’m making as it bakes and then I serve the sauce for dipping as well. The recipe can be adjusted for bigger or smaller batches…just start with equal parts miracle whip and ketchup.

Creamy Chicken Enchiladas

This recipe is adapted from the June/July 2011 issue of Simple & Delicious. For the most part it was pretty easy to mix up and quick to assemble. This also makes an extra pan of enchiladas that you can freeze and bake at a later time so that’s a plus…not going to complain about having a homemade go-to meal in the freezer! My husband gobbled these up so I think they got his seal of approval.
