This is a Cooking Light recipe from September 2003. It was shared with me by CrispyRice on the WW message boards and it has become my go-to banana bread recipe. It is super-easy to make, delicious, and somewhat healthy…you can’t beat that!

This recipe is from the June/July 2010 issue of Simple & Delicious magazine. The fresh corn and feta cheese add so much flavor to this recipe. I’m not a huge fan of cherry tomatoes so in the future I may make this with a regular diced tomato instead.

This is a quick and easy recipe for Salisbury steak. The beef mixture can easily be made into meatballs instead for a change of pace. Either is very good served with mashed potatoes.

I’ve seen (and tried) numerous variations of this recipe. This is the version I’ve come up with from the various recipes out there. The ramen noodles are crunchy at first and will soften over time the longer they’re in the dressing. So yummy either way! Note: The dressing ingredients I’ve listed are about perfect for a 10oz. bag of coleslaw…may need to increase the oil and/or vinegar just a bit for a larger bag.

This recipe was inspired by a recipe Roni posted on greenlitebites.com. Delicious! Note: My version makes a huge batch…approximately 8 servings. It could easily be adapted into a smaller recipe, I just wanted to use up my entire box of pasta and package of sausages right away. Plus I love leftovers for lunches!

Threw this together last-minute for supper and it was so good I decided I needed to type it up so I remember to make it in the future! I thought the hubby would complain since they didn’t have meat, but he even said how good they were. Score!

I found this recipe on the back of a package of Nestle butterscotch morsels and it makes a great cookie! Definitely stick to tablespoon-size drops of batter like the recipe says. Next time I might add just a bit more flour to the batter as well.
