Cabbage Roll Casserole

Growing up, cabbage rolls (AKA “pigs in a blanket”) were a norm at our house. Love them! Once I got older I finally realized it takes an awful lot of effort to make them…so I was thrilled to find this recipe for a “lazy” version in a local cookbook. I love that it tastes great, is low-cal, and provides yummy leftovers for work lunches!

Root Beer Frosting

I found a recipe for Root Beer Float Cake at restlesschipotle.com and adapted it just a bit. I wasn’t a big fan of the cake (turned out quite dry and not very root beer-y), but the frosting was delicious! I decided from now on I’ll make it with a plain white cake.

I came across this recipe on the Taste of Home website and adapted it just a bit. It’s extremely quick and easy to make and it tastes great as well. The pina colada mix makes it unique from other fruit salad recipes.
